The cookies, kept in their box, should fine for a week. You can refrigerate for another week, or freeze for longer.
For the DIY kits, you can leave the royal icing out or in the refrigerator for up to two weeks (in the pastry bag or else it will dry up). Just be sure to massage the icing before use to be sure the color is well blended as it can separate after sitting.
The DIY kits have cookies bagged in food-grade cellophane bags in groups of three or four. Custom cookies are packaged in bakers boxes by the dozen or two dozen. Individually bagged cookies are available for an additional $3 per dozen.
